Camasunary Country Bars

A delightfully sweet, high energy snack bar named after one of the most beautiful bays in Scotland. It's easy and quick to make and cheaper than buying bland cereal bars in the health food shop...


3oz/75g butter
2 tablespoons of golden syrup
8oz/225g Alpen or Country Store breakfast cereal
2oz/50g chopped dates (optional)
2oz/50g glace cherries
4oz/100g chocolate


Melt butter and golden syrup in a saucepan. Stir in the Country Store/Alpen, dates and cherries. Mix well. Turn into a greased baking tray. Spread the mixture to around 2cm in depth.

Break the chocolate up and place it in a basin or plastic jug. Stand this over a pan of hot water. Heat gently until the chocolate has melted. Spread the chocolate over the mixture.

Leave in a cool place until the chocolate has set, then remove from the tin and cut out into fingers.
